5 Easy Vegan Meals, Vegan Kid Approved!

Finding recipes that kids will eat can be really tricky. I have scoured cookbooks, blogs, various websites and magazines for recipe ideas that my kids would actually eat. There are an abundance of amazing meal ideas out there but plenty of them are not toddler friendly. So many recipes have crazy ingredients, some are way too complicated and time intensive. To save you some trouble of the hunt, I have rounded up some tried and true recipes that are easy to make, full of nutrition and taste good too.
1. Creamy Vegan Mac and Cheese
This is easily my children's favorite food! I usually double the recipe and freeze it in portions for quick meals when time is short. This is a hit with vegans and non vegans alike.

2. Vegan Grilled Burritos with Black Beans, Rice, Avocado & Salsa Crema
These burritos quickly became a staple in our house. They are packed with goodness and flavor, not to mention simple to make. The salsa crema is our favorite sauce and can totally be used with other dishes if you double it.

3. Homemade Vegetarian Chili
This is such a versatile chili recipe! I have personally like adding butternut squash or sweet potato depending on what I have on hand. As usual, I like to cook a double batch to make sure I have enough to freeze a few portions for quick meals down the road.

4. Vegan Lemon Chickpea Orzo Soup
Just yum! This is such a lovely soup with a little zing to it. It's filling and my 4-year-old asks for seconds, need I say more?

5. Easy Vegan Chickpea Curry with Potatoes
This has long been a favorite in our house. It is tasty and easy to adapt based on what vegetables you have on hand or if you just fancy trying a new combo. I usually omit the peas and add in broccoli and cauliflower instead. I also make this a pretty mild curry but you can build up the flavor and spice to fit your tastebuds. This freezes quite well, you can almost always find a few portions of this in our freezer.
